Green tea leaves hand-tied around a dried flower into a tight ball that sinks, swells and then opens into a blossom standing upright in the water — the whole performance takes about three minutes. Behind the spectacle is a real tea: light, sweet and gently floral, with jasmine or lily depending on which flower is bound inside. Brew it in clear glass or you will miss the point. The easiest gift in the shop to explain.
In Chinese this is written 工艺花球茶 and pronounced gōng yì huā qiú chá.
