Whole chamomile heads grown in Xinjiang — domestic, not the Egyptian crop that fills most of this market, and you can see the difference in the flowers, which arrive intact rather than as broken petals and dust. The infusion is pale gold, honeyed and softly apple-like, with none of the hay or bitterness that broken chamomile gives. Caffeine-free. An evening cup, and the gentlest thing on our shelf.
