A 2011 Anxi Tie Guanyin that has been re-roasted over charcoal by hand every couple of years since it was made — the practice that turns a green, orchid-scented oolong into what Fujian drinkers call a red oolong. The leaf is almost black now and the cup pours amber-brown: dried longan, roasted chestnut, camphor wood and a dark honey sweetness, with the orchid still there underneath the fire. No astringency left at all. The oldest and most expensive oolong on our shelf, and the one to sit with rather than drink quickly.
