GABA tea, or gaba-cha, is an oolong made by a modern Taiwanese method: instead of withering in open air, the leaf rests in a sealed nitrogen chamber, which raises its gamma-aminobutyric acid content and changes the flavour entirely. The liquor pours amber and rounded — stewed apple, dried longan and honey where a roasted oolong would give you smoke — with almost no astringency. Loose leaf. Brew gongfu style at 95°C, five seconds for the first infusion, and it will carry eight or more.
In Chinese this is written GABA乌龙茶 and pronounced GABA wū lóng chá.
