Dried wolfberries from Zhongning in Ningxia, the county that gives the berry its reputation — plump, deep orange-red, and sweet enough that people eat them straight from the jar. Steeped in hot water they give a clear amber infusion tasting of raisin and dried apricot, with a light savoury edge at the back. Caffeine-free. Drink it alone, add a spoonful to chrysanthemum for the classic pairing, or eat the softened berries afterwards.
