Rock oolong from the Wuyi cliffs other than Da Hong Pao — the cultivars the local growers drink themselves, rotated by season and by what the year gave. Charcoal-roasted in the traditional way, so the cup runs dark and savoury: burnt sugar, dried apricot, orchid behind the roast, and the wet-rock minerality the Wuyi calls yan yun, rock rhyme.
