Pan-fired green tea rolled into tight pellets that unfurl as they steep, which is where the English name comes from. The cup is bold and straight-edged — toasted grain, a plum-like tang and a clean smoky edge that holds up to sugar, milk or fresh mint. Pingshui has made this leaf for the export trade for two centuries, and it is the classic base for Moroccan mint tea. Hard-wearing, forgiving of boiling water, and the tea to reach for when you want something with backbone.
In Chinese this is written 珠茶 and pronounced zhū chá.
