Hawthorn sliced and dried with the skin on, so the rings keep their deep red rim. It brews a rosy amber and tastes properly sour — sharp red apple and crab apple, a tannic snap, then a slow sweetness underneath that arrives once the sourness clears. Caffeine-free. Very good with a little rock sugar, excellent iced, and the tea to pour after a rich meal simply because the sharpness tastes right there.
In Chinese this is written 山楂 and pronounced shān zhā.
